Ployez-Jacquemart’s Extra Brut bottling of Passion is composed of a blend of forty-four percent Pinot Noir, thirty-eight percent Chardonnay and eighteen percent Pinot Meunier, with one-third of the vins clairs barrel-fermented (these wines do not undergo malo) and the other two-thirds raised in tanks.
